Proximo Spirits has released a new Tequila from Maestro Dobel: Tahona Tequila Blanco. The new release ($48 a 750-ml.) is made from organic blue agave sourced from a single estate in Mexico, and produced using ancestral production methods. Case in point—the cooked agave hearts for this release are crushed using a large stone wheel, or Tahona, before being double distilled on copper pot stills. The new release is bottled at 40.5% abv.
