Foley Family Wine & Spirits has launched Penumbra mezcal, the first agave-based spirit developed by Chip Tate, Foley’s master distiller of innovation. The mezcal ($45 a 750-ml.) is distilled from Espadín and produced in Santa Ana del Río in Oaxaca, using Encino oak to cook the agave over a three day period. The spirit is bottled at 46% abv. Penumbra is now available in select retailers across the U.S. and joins other brands like Minden Mill whiskies, Charles Goodnight Bourbon, and Tequila El Mexicano, among others, in Foley’s portfolio.
